Avocado Toast

Here is the recipe for the Avocado Toast that Stephanie makes for Grant and Jesse:

2 Slices of bread
1/2 Avocado
Parmesan Cheese
Extra Virgin Olive Oil
Garlic Powder, Salt & Pepper

Preheat oven to 375
1. Use a pastry brush to spread olive oil on both sides of the bread (or, drizzle it directly onto the bread then wipe the two pieces of bread against each other to spread the oil around, like I usually do).
2. Put the bread in the oven until it’s reached your desired level of brown/crunch. Approximately 10 minutes. Alternatively, this can be done in a toaster oven, with standard “toast” setting.
3. While the bread is baking, mash up the avocado with a fork and add garlic powder, salt and pepper to taste.
4. When the toast is ready, spread half of the avocado mixture onto each slice, then great fresh parmesan cheese (I prefer to use the smaller holes of the grater) directly over the avocado.

Note: If you are only making one batch (two slices), you can save the half of the avocado with the pit still in it by covering it with plastic wrap and putting it in the fridge. It will last for several days. Be sure to tap the plastic down so it is on the surface. When you use it, you may need to scrape away a very thin layer of what has turned brown, but then you’ll be good to go!
